My wife and I are trying to eat more healthy, and also up our protein intake while getting a balanced mix of vitamins and minerals so that we can maximize the benefits of excercising daily – the goal is to have one green veg with white meat in the afternoon, and one starchy veg with lean meat in the evening.
She brought home this squash-looking thing and I don’t know what it is or how to prepare it. It is about 30cm long and somewhere between zucchini and butternut in terms of hardness.
Any ideas? I’m thinking just cut it into chunks and roast it with olive oil, lemon juice and salt and pepper?
